Observation: Observed aluminum pie pans were reused and stored on bakery kitchen shelf - removed, corrected on site.
- Cleanability of floors, walls, and ceilings
Observation:Observed ramp and steps from main kitchen to back storeroom and baking kitchen are unpainted or unsealed plywood, that is not smooth/nonporous/easily cleanable.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation:There is no thermometer in bakery kitchen refrigerator
- Storage of clean linens, single-service, and single use articles
Observation:Observed several cases of take-out containers and aluminum containers stored on basement floor and back storeroom floor. Observed aluminum pie pans and bread pans stored with the interior surface exposed on baking kitchen shelf.
- Food is properly labeled
Observation:Observed croissants and donut holes are not labeled with store name and address and list of ingredients. Observed biscotti and French bread not labeled with store name and address.
- Food storage - preventing contamination from the premises
Observation:Observed open packages of food on bakery kitchen shelves. Observed soda post mix boxes stored on basement floor.
- Bare hand contact with ready to eat foods
Observation:Observed employee handle toast with bare hands - corrected on site.
- Outer openings are protected
Observation:Observed openings around edge of back door and the bases of the outer walls in the addition where the walk-in cooler and freezer are stored.
