Thermometers Provided/Accurate/Properly Calibrated (2C) Please provide a probe thermometer to properly monitor cold and hot foods and a thermometer inside the pizza prep cooler. Observed main pizza area reach in cooler with no thermometer and no stem thermometer to monitor cold holding temperature foods. Please note having a thermometer can help prevent bacteria growth in foods that are out of temperature. |

Also the prep island, under the cutting boards have a large amount of derbis. Clean and sanitize all areas to prevent contamination of foods." |
Good Repair "The following items are in need of replacing: Observed chipped plastic lids, chipped and rusty cutting knives, and chipped pizza cutter. Due to being chipped, when slicing and cutting foods, more pieces of metal could chip and contaminate the foods. " |
