III. Observed food worker washing hands in the 3 compartment sink. This could potentially contaminate clean utensils. Please wash hands only in the handsink. PIC explained issue to employee.
VII. Observed goat meat being cooled in large quantities. This could cause the meat to not reach 70 F or below in 2 hours or 41F or below 41F or below in 6 hours causing bacteria/ spores to grow. Please cool in shallow quatities.
XI. Observed fish stored unprotected in the freezer. This could allow for contamination. Please store in closed containers or at a minimum covered.
XI Observed sterilite containers holding several foods. These containers have not been approved by NSF to hold food. Please replace with approved containers.

II. Personnel Cleanliness (+) Personal cleanliness of the employees was acceptable. Designated areas have been correctly assigned.

V. Thawing (-) Foods were not being thawed in accordance with OAC. Please only thaw foods under cool running water, inside reach in refrigerator, or during the cooking process.
