Princeton obviously is the best town within that drive though your price range is probably too low. It has the walkable downtown, culture and arts and the best schools.
South Brunswick is ok. It has good and ever improving schools and property taxes are better than east Brunswick. A lot of Indians live there, just FYI.
East Brunswick is more balanced in its diversity but the property taxes are atrocious. It is relatively more convenient for driving towards NY however, being located near the turnpike. Route 18 in the afternoon rush hour is a nightmare, however.
Metuchen is a similarly highly taxed town like east Brunswick but at least you get a direct train line to Manhattan and a nice walkable downtown for your money. Like Princeton, it is also a bit pricier than the Brunswicks. There is a lot of commuter congestion too. Very good schools.
Actually, I would recommend Bridgewater. It's probably 25-30 minutes out from east Brunswick but has good schools and more reasonable property taxes. There is lot of nature around there (Duke farms, Duke Island Park) and the mall and Somerville a super fun town is very close-by.

Are you coming from out of state? You have a lot of good choices, i'd start the focus on Somerset and Hunterdon counties. There is a lot of nature that way, good school and like the someone else said Bridgewater area has lots of shopping and things to do that way.
