Should I trim it down now even though it is beginning to bud out, or should I wait until it buds out completely, since it grows on its old wood? Thank you,

Ugh not a good time to move it. Just after it has gone dormant for the winter is the best time to prune and move older varieties of Hydrangea.
I reclaimed 60 year old Hydrangeas from my Grandmother's house before it was sold after she passed. It was during the summer and I made sure to take twice the size of the root ball of dirt with them. They stressed and dropped most of their leaves but I was able to nurse them back to health over the next year.
If your going to make the move do it quick and read up on the process of transplanting online.
Get some Superthrive to give the plants after transplanting.
