Since a friend of ours just had surgery and a death in the family, I thought I'd make an enchilada bake, with ranch coleslaw, and a fruit salad with yogurt sauce.

SO....we will be having the same. Easier that way.

chilly rainy nasty out there today, so I'm making a spicy black bean tomato bacon soup for dinner tonight.

turkey soup with veggies and pasta (boiled down a roasted turkey carcass from earlier in the week, added chopped celery, onions, carrots, and potato/ sweet potato and some basil last minute, the turkey had been dry rubbed with a spice mix so there was other seasoning too)...

Not the prettiest looking thing (with all the bits and pieces) but tasty!

The hub wanted to cook us PLAIN BOILED TOFU AND LETTUCE (with no seasonings)...but I wrestled from him the right to cook tonight.

I whipped up some homemade chicken apple sausages, red beans and rice, tangy collard greens, and for dessert, banana coconut pancakes.

I think I will go for foxi-fajitas. Chicken, onion, red bell pepper, jalapeños, cheese, tossed with a bit of enchilada sauce and baked. Big green salad.

Tonight chicken goulash with orange/yellow Bell peppers,garlic,tomatoes.onions,sour creme, baguette for dipping and lassi/water to drink. For dessert orange quark.
