what are the top 3 places hands down in chicago?
i do not mean
-a known chef owns the place
-the rolls are super super unusual
-the cost is high
-the atmosphere is great

what i do mean is
-the freshness is second to nothing else, most noticed in pieces
-rolls are rolled consistently well...not mushed, not falling apart easily, not excessive with rice

i've been spoiled by the best

I don't think a sushi purist would rate a sushi place based on "super unusual rolls" (this is NOT sushi, I'm sorry), high cost, or amazing atmosphere (although for restaurants this certainly is a good thing).

This is hard. I'll list more than 3 though... Kai Zan, Kai, Arami, Katsu, Mirai, and I am weirdly partial to Coast for some reason.

this post is directed at sushi lovers, not purists. everyone has an opinion, and i am not here to judge it, thus i am guiding what i am looking for as usual to avoid confusion

Arami, at least when the old chef was there, not sure since he left.

Katsu I think is the most expensive, with same-day delivery of seafood or something like that. Never been but it is far more expensive than most places.

Actually went to Cocoro recently and loved it. Everyone in there was Japanese.

Far, far less expensive but a lot of fun is Yuzu on Chicago Ave. If you are looking for a great experience at a very reasonable cost, that is hard to beat.

Also the former chef from Arami went on to open his own place. Not sure what it's called but worth checking out.

I gave you exactly what you are looking for, and all of the things you don't want have "purist" written all over it. If you don't think a sushi purist is a sushi lover, then I have no idea what to tell you.

Sushi is supposed to be (well at least according to the top experts in Japan) fresh and simple. You basically asked for a place that delivers good, fresh sushi and is apart from price, amazing atmosphere, or unusual rolls.
