hunterseat df: Hunter Seat Equitation is a division that is judged on the ability and the style of the rider. The riders can be judged both over fences and on the flat.

Although true, hunters DO eat, at least the skilled ones do, my name derives from the world of horses.

And because the word hunter is in my name, people automatically think I'm a guy. Not even close.

Whenever I meet someone named Hunter I have to bite my tongue to keep from saying "That's my name, too!"

May be Mango Month

The group downstairs from my office posts pot-luck sign-up sheets for any given holiday. Cinco de Mayo was fast approaching so I signed up. I wasn’t worried. No one really cares what you bring. Japanese mochi on St. Patrick’s day went over just fine. I kept it in the back of my mind, holding fast to my proud tradition: last minute is always best. For instance the time I planned, created and perfected a complete costume from 6pm one night (when my son announced he was going to be George Washington the next day) until 2am. It was a huge success!


Our local store has a whole section of assorted frozen fruit. Cleaned, cut up, ready to use fruit. For a couple bucks a bag, it’s really nice to get it already prepared to have on hand for spur-of-the-moment recipes.


Whoa there, cowboy, that is a very cool phrase, isn’t it? Spur-of-the-moment. I consider myself a horse enthusiast and, though I rarely use spurs, I do understand them as aids to be used judiciously. But to have a moment in time that needs spurring congers up some interesting images. Do you find yourself lazing about, wishing you had something sweet for dessert? A moment that indeed needs spurring. Tally ho!


And that’s part of the reason I look at the recipes on the backs of the frozen fruit. Strawberry smoothie, Cherry something, peach cobbler, mango salsa. MANGO SALSA!!? Exactly what I needed for Cinco de Mayo!


I just want to pause, again, to say it's worth every penny to get mango already cut up in chunks. Did you know the skin of a mango has similar properties as does poison ivy? I am not playing. I learned this living in Hawaii where I could walk outside of my house or my office and pick up mangoes from under trees where they would often go to waste. Then someone warned me but I didn’t believe it so I looked it up. I got a big AH-HA moment when I remembered the time in Mississippi when my lips swelled up so big I looked like a botched collagen victim. MANGOES! At the time I couldn’t figure out what happened but I do have a habit of kissing my kitty-cats on the tops of their head. I figured one of them had been in the poison ivy. My coworkers all told me they’d have stayed home if they looked that bad – thanks guys. Sadly, I figured mango was more trouble than it’s worth. Until now!


So I had my pot-luck plans. I made a double batch of Mango Salsa and got enough ingredients to make some for the Virginia Gold Cup, a popular steeplechasing event that takes place in Warrenton, Virginia on Kentucky Derby Day. We planned to attend with a dozen or so friends. The salsa turned out great for both events. We love it with tortilla chips but it’s excellent on salmon. Since then I’ve made it so many times I think we’re pretty much mango-salsa’d out. We finished up the final batch last night. After nearly a month, I’m on mango hiatus.


But what a great month for mangos. Just don’t kiss ‘em!

    Mango salsa. I may have to try that sometime. Wonder if it'll be good with tortilla chips?

    It'd be different when it doesn't involve tomatoes.....
