What are areas of NOLA with the most diversity?

I have no children and didn't grow up here so I don't know about the schools, but if you're looking for diversity and a mix of African Americans / Asians - New Orleans East comes to mind. I will say, while the city does have a large population of blacks (roughly 60%), the Asian population may be a little underwhelming to you (around 3-4%). But there are more Asians here than I've seen in any southern city I've been to. I'll also say that the city is going through gentrification, so what is said about neighborhood demographics may not hold true when you're ready to move.

A question though: you said you didn't like the craziness of the east coast? What craziness didn't you like? New Orleans is a very nutty city. I find it a little odd that you don't like craziness but you wanna move here
The traffic, the congestion, just always feeling like I'm in a crowd, waiting in line, rudeness, arrogance and that "Jersey attitude". I think it was tolerable when I was an adolescent and young adult but I'm older and know what qualities I would like in a place to settle. Craziness is fine (and much different than rudeness). I'm a licensed social worker and counselor and have worked in the child welfare and mental health fields for over 20 years, so I have had a wild ride in that regard. We live in a very conservative area in West Michigan, I have never really fit in here (probably because of my Jersey mouth I think the wacky stuff going on down there in NOLA is appealing in that it seems people don't take themselves so seriously and that would be refreshing, if I am right about that assessment.
