School holiday

I've noticed my son gets a bad attitude after an extra day off from school. He wants to stay up late and gets up late, then I struggle with him on the school night. Being a single parent of a teenage son is very hard. I speak to him nicely, and it still doesn't work. I get mad and it's even worse. I try to take his privileges away and he rebels more. Positive or negative punishments don't work with him long term either. I don't want to fail at this, but it's frustrating.
All he wants to do is either play xbox or go fishing. I wish I was living close to a pier or a bayou like east Texas so he could entertain himself. He gets better when he's back at school. Xbox makes him have an attitude but if I took that away, he's going to be real mad and might do something stupid out of boredom. I need to redirect his energy to something better.
