Yesterday, I discovered my local library has an account with Zinio that let's you read magazines for free. I've been going crazy reading all different kinds of my favorite magazines in the comfort of my living room.
I have a wide range of interests, from cooking to crafts to social issues and traveling. So, with the rain pouring down today as well, and a cup of my favorite black tea infused with pomegranate, and some lifetime or hallmark movie in the background, I've been reading a lot. It's amazing how technology has made our lives simple but also has isolated us. That's another topic for another day, but I learned a tamale recipe that I made and was so simple and delicious that took me no time. My son loved it and he is very difficult to please!!
I say simple, because I mixed the dough, with shortening, salsa and cooked chicken breast all together and spread it on corn husk. One hour later and voila!! Usually I feel so tired after making tamales(I'm not Hispanic but love tamales) but today, I felt fine. Cooking from different cultures is a form of traveling for me. It makes me so happy to be able to accomplish this. Next, I'm going to make some rich hot chocolate as it's getting dark and I don't feel like eating dinner for now..
