Authentic, homemade Polish Pierogi

I am new to the Charlotte NC area. Just moved here last year, when my husband was transfered with his work. We owned and operated Polish cuisine restaurant back in Buffalo NY, serving pierogi, golabki, potato pancakes, crepes, czarnina, barszcz, just to name a few. I entered my polish food into taste of southtowns 3 consecutive years and won award each time. Second year I won the award of "Overall best ethnic food" As much as I loved the restaurant it was a lot of work, but I would very much consider opening a deli where I could still sell my delicious polish food, I'm not sure how much demand there is for Polish food around Charlotte NC and that's why I'm writing this blog. I'm looking to get some response from the Polish community and anyone out there who loves polish food. Thanks for reading.
