    Observation: Sausages were at 48 F, sliced turkey was at 48 F, in 3 door line prep unit. Raw meat and raw seafood were at 45-47 F, in under grill drawer unit. Items iced down. Call for service was placed.
    Correction: Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under section 3-501.19, and except as specified under paragraph (B) of this section, time/temperature control for safety food shall be maintained at 5ºC (41ºF) or less. Shellstock Tag - VA 846 SS. Chlorine sanitizer in the bar dishmachine and the kitchen dishmachine observed at proper concentration (50 ppm - 100 ppm). Ensure that the chlorine sanitizer in the wiping cloth buckets are at proper concentration. The door to the outside dairy/meat walk-in refrigerator was observed in need of repair. Exterior of the dry storage containers observed in need of cleaning. A recheck will be conducted for the 3-door preparation unit. Do not store TCS food product in the unit until it has been properly repaired. Cold holding equipment must maintain food product at 41 F or below.
