    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: To-go containers were found handled, displayed or dispensed with the food or lip-contact surface facing upward.
    Correction: Store to-go containers with food or lip-contact surface facing downward to prevent contamination prior to use.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: Observed employees using the automated handwashing station in a manner that was not approved by the manufacturer.
    Correction: Discontinue to use the automated handwash station for dirty utensils. This station must be used in accordance with the manufacturers operating procedures.
