Overall facility is clean and orderly. Hand sinks supplied with soap and paper towels, proper hand washing observed, and glove use when handling ready to eat foods. Discussed with the PIC obtaining proper test strips for the three bay sink and repairing or replacing the broken and loose floor tiles in front of the deep fryer.
  • Utensils - In-Use - Between-Use Storage
    Observation: Dispensing utensils improperly stored between uses. The dispensing utensil stored in the cinnamon sugar on the table top did not have handle.
    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a QT test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: Floor tiles in front of the deep fryer and around the floor drain are broken and loose and no longer smooth and easily cleanable.
    Correction: Repair or replace floor tiles to make it smooth and easily cleanable.

Sanitizing wiping cloth solution available and in use at 250 ppm. Testing strips available and in use. Reviewed food safety with PIC and staff. PIC to monitor adequate temperature of middle island counter refrigerator. PIC to monitor adequate warm water temperature of hand sink near office. Very nice facility.

Proper glove use by employees observed. Hand sinks well stocked and in use with warm water, soap, and paper towels. Discussed food safety practices with the PIC. Overall the facility is clean and orderly.

    Observation: The self serve drink machine in the front and the drive through drink machine in the back needs to be cleaned of the caramelized soda residue.
    Correction: Wash, rinse, and sanitize the drink machine dispenser heads.
