    Observation: The door gasket to the Beverage Air 2-door reach in refrigerator is in poor repair. Access panels missing for the 1-door and 2-door Beverage Air reach in refrigerators.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications. Replace the access panels with factory replacement type or fabricate ones that will protect refrigerator coils from accumulating dirt and debris.

    Observation: The nonfood contact surface of the following equipment has an accumulation of grime and/or debris:
    - Shelf above the 3-compartment sink.
    - Bottom shelf of small prep table in the kitchen.

    - Bottom exterior surfaces of the Beverage Air 1 and 2-door reach in refrigerators.

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Correction: Repair or replace the door gasket to the pizza prep reach in refrigerator and replace the access panels to the Beverage Air reach in refrigerators in accordance with the manufacturer's specifications.

    - Wire condiment rack in the sandwich prep area.
    - Door Gasket to the 2-door Beverage Air reach in refrigerator.
    - Can opener bracket

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Physical Facilities in Good Repair
    Observation: Wall below hand washing sink in back of the facility, wall behind the front hand washing sink is not maintained in good repair
    Correction: Recoat the wall behind the front hand washing sink. Repair the wall and seal with a food grade paint for the wall under the hand washing sink in the back of the facility. Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floors through out the facility, especially under and behind equipment and at floor/wall junctures, and wall behind the bread rack and Baker's Pride oven has an accumulation of grime and/or debris.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
