    Observation: The hobart LX i is not operated IAW the manufacture's
    Correction: The machine is not drained properly. The cleaned dishes are washed in dirty water. The machine does not rinse for ten seconds. Therefore, the timer needs adjustment.

    Observation: The floor drain at the dishwash has brown stains and needs cleaning
    Correction: Clean and maintain all plumbing components and fixtures.
