Observation: Unauthorized personnel in the food preparation, food storage, or warewashing areas - personnel that were not working in the kitchen washing hands at the handwashing sink for cafeteria personnel only or workers in the cafeteria.
Correction: Remove unauthorized personnel. The person in charge shall not permit persons unnecessary to the food establishment operation in the food preparation, food storage, or warewashing areas.

Observation: The nonfood contact surface of the wooden table is not constructed to be easily cleanable - wood is split with crevice.
Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices.
- Temperature Measuring Devices - Ambient Air and Water
Observation: The ambient (air) temperature measuring device (degrees F) located in the Metro C5 is not accurate or working properly.
Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use. If the ambient thermometer cannot be repaired place an oven thermometer in the coolest part of the unit.
- Warewash Machines, Temperature Measuring Devices
Observation: The temperature measuring device for the (wash/rinse/sanitizing) tank of the warewashing machine is (missing/not operating.)
Correction: Provide a functioning temperature measuring device at the (wash/rinse/sanitizing) compartment so employees can routinely monitor the water temperature.

Observation: Plumbing connections for the pre-wash sprayer sink are leaking. 2-compartment sink drain is leaking.
Correction: Plumbing systems and components shall be maintained in good repair.

Observation: The following physical structures are not maintained in good repair: fan/window area at the dishwasher, floor in restroom was partially dug-out for repairs for steam lines at the floor/wall area and then not finished to be smooth, nonabsorbent and easily cleanable,
