Equipment that is easily cleaned minimizes the presence of pathogenic organisms, moisture, and debris and deters the attraction of rodents and insects.

    Observation: The three compartment sink is missing three properly fitting stoppers. The ice machine is not maintained in a state of repair and condition that meets the requirements of materials for construction and repair and/or design (remove).

    Observation: A couple of dead roaches were observed on the floor of the premises.
    Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by eliminating harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces. Effective measures must be taken to control their presence in food establishments.

    Observation: The permit holder is not complying with directives of the regulatory authority. License states prepackaged foods only. The facility cuts melons and repackages, rewraps muffins and croissants, and has a frozen yogurt machine and prep refrigerator.
    Correction: Upon acceptance of the permit issued by the regulatory authority, the permit holder in order to retain the permit shall comply with directives of the regulatory authority including time frames for corrective actions specified in inspection reports, notices, orders, warnings, and other directives issued by the regulatory authority in regard to the permit holder's food establishment or in response to community emergencies.

The objective of cleaning focuses on the need to remove organic matter from food-contact surfaces so that sanitization can occur and to remove soil from nonfood contact surfaces so that pathogenic microorganisms will not be allowed to accumulate and insects and rodents will not be attracted.

The thermostat to the produce display unit was lowered by the person in charge. The ambient air temperature was observed > 40 F at the start of the inspection, and the ambient air temperature had reach 40 F by the end of the inspection. Manager will continue to monitor the unit(s). Manager will need to renew the Northern VA food manager card at ORS Interactive. A recheck will be conducted.
  • Critical: Time/Temperature Control for Safety Food, Cold Holding (corrected on site)
    Observation: Container of prepacked hummus observed cold holding at improper temperature in the reach in refrigerator unit (container was discarded, and the thermostat on the unit was lowered by the person in charge).
    Correction: Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under section 3-501.19, and except as specified under paragraph (B) of this section, time/temperature control for safety food shall be maintained at 5ºC (41ºF) or less. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 5ºC to 57ºC (41ºF to 135ºF) too long. Up to a point, the rate of growth increases with an increase in temperature within this zone. Beyond the upper limit of the optimal temperature range for a particular organism, the rate of growth decreases. Operations requiring heating or cooling of food should be performed as rapidly as possible to avoid the possibility of bacterial growth.

The establishment was observed offering for sale cut cantaloupes, cut melons, and frozen yogurt which is served with or without toppings dispensed by an employee. This is a failure to comply with the conditions of the permit. FDA Food Code 8-304.11(B) Responsibilities of the Permit Holder requires that the Permit Holder, in order to retain the permit, shall comply with the provisions of this Code including the conditions of the permit. The establishment's current permit conditions are as follows: PREPACKAGED FOODS ONLY.
A follow up visit will be conducted on or after July 19, 2013 to ensure compliance with the license issued by Arlington County Environmental Health Bureau.

    Observation: Observed cut canteloupe and cut melon prepared and packaged on-site cold holding in the produce display cooler at the improper temperature of 50-52 F. Corrected by instruction.
