Observation: Observed food employee failing to wash their hands after handling money then donning gloves to handle ready-to-eat foods.
Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
- Critical: Reheating for Hot Holding*
Observation: Nacho Cheese classified as ready-to-eat (RTE) taken from a commercially processed, hermetically sealed container, or from an intact packaged purchased from a food processing plant, was not reheated to the proper temperature for hot holding.
Correction: Reheat commercially processed RTE food for hot holding to 135°F or above.

Observation: Nacho Cheese was observed cold holding at an improper temperature.
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.

Observation: No written procedures for the use of time as a public health control with potentially hazardous foods.
Correction: Provide written procedures for the use of time as a public health control. The procedures must include the following steps or practices: a. Food must be marked with the time within which it must be cooked, served or discarded. b. The food is served or discarded within four hours from the time when the food is removed from temperature control c. Food in unmarked containers or packages, or for which the time expires is discarded and d. Written procedures are maintained in the food establishment and made available to the regulatory authority upon request e. Once time is implemented as a control measure for potentially hazardous food, no other measures may be substituted.

Observation: Pizza for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time.
Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.
- Equipment and Utensils - Multiuse, Characteristics
Observation: Observed a single-use plastic cup (without a handle) being used to scoop ice out of a cooler.
Correction: Replace the use of single-use plastic cups as an ice scoop with an actual ice scoop that has a handle which can prevent the contamination of the ice if used properly.
- Temperature - Food Temperature Measuring Devices - Provided
Observation: The person in charge could not provide a food temperature measuring device.
Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.

Observation: No methods are being used to control pests. Observed an abundance of flies in the front food serving area and an active wasp nest in the rear dry storage area.
Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required.

This seasonal establishment was not in operation during this inspection. A new PIC has taken over and the inspection was discussed with him. It was apparent from this inspection that there is a need for proper food handling training for all staff that will be working in the facility. It was also determined that a decision must be made about how the facility wishes to handle the serving of pizza in the future. Currently, pizza is received from a permitted restaurant and kept in a warming bag until all the pizza is sold. No hot holding of the pizza was being done and no time for public safety was being utilized. The matter was discussed and it is something that will be addressed before becoming operational for the 2014 season. We also discussed the procedure for holding over leftovers for the next day to be reheated. A pre-opening inspection must be conducted prior to operating the establishment for the 2014 season.
