    Observation: Cutting boards on both prep tables are heavily scored. The door gasket on the white freezer is in poor repair.
    Correction: Replace or refinish the cutting boards. Replace the door gasket on the white freezer.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils (repeated violation)
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Hand sink and the hood filters.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The floors under equipment were noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Discussed cleaning and sanitizing. In use pans and utensils must be washed, rinsed and sanitized every 4 hours.
Discussed time control for hamburgers and sliced tomatoes.

    Observation: The door gaskets to several refrigeration units and the cutting board for the prep refrigerator were observed in a condition that prevents necessary maintenance and easy cleaning.
    Correction: Repair these items to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair these items, replace them with ones that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Tops of equipment, hood vent filters.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: Sanitzier being applied to food contact surfaces concentration is too high.
    Correction: Utilize only chlorine sanitzier that is 50 to 100 ppm.

Person in charge contacted the health department because they were ready to cool their chili.
The ground beef is removed from the pot it is cooked in, and placed into a plastic container. It is mixed with ingredients at that time, then split into two metal pots. At the time it was split, it was at 128°F.
This was because of the grease being removed from the ground beef and the beef being placed into a different container. Temperature was taken several times and the chili was cooling adequately.
Only recommendation is to only loosely cover the two containers of chili when they are placed in the refrigerator.
Discussed cleaning frequency for various surfaces in the kitchen. The tops of equipment and the wall behind the grill, where the only ones with any build up.
Discussed reheating of chili, 165°F within 2 hours. It appears this requirement is being met.
Discussed drinks for staff. Bottle drinks are not allowed because they may cause indirect hand to mouth contact, thus requiring handwashing every time a drink is taken. Always use a cup with a lid and a straw.

    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands that did not reach 145°F from being placed on the grill..
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands. Food that is heat treated to a minimum of 145°F can be handled with bare hands.
  • Cloths - Wiping Cloths - Use Limitation
    Observation: Wiping cloths improperly stored between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Equipment - Cutting Surfaces
    Observation: The cutting board on the prep refrigerators are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Toilet Room Receptacle Covered
    Observation: There is no covered refuse container for the disposal of feminine napkins in the ladies room stall.
    Correction: Install a covered refuse container for the disposal of feminine napkins in the ladies room stall.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: Several spots have been sealed with an expandable sealer and does not provide a smooth surface.
    Correction: Smooth out the sealed spotts on the walls to allow for easy cleaning.
