NOTE: At this inspection EHS observed staff washing hands and wearing gloves. Staff seem aware of Employee Health policy guidelines and when not to come into work.

Today's visit was to verify that the dish machine had been repaired and is working. Was informed by the CFM that Ecolab was back out two more times and has identified the plumbing as a potential issue for the dish machine. Plumber and Ecolab will be out again in the next week . Meanwhile facility has set up the 3 VAT sink and is using Quaternary Ammonium sanitizer for sanitizing all utensils and equipment.
No violation noted during this evaluation.

    Observation: The GREEN AND YELLOW cutting boards hanging opposite the walk in refrigerator are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition. OBSERVED THE GREEN AND YELLOW BOARDS HANGNG OPPOSITE THE WALK IN WAS SCRATCHED AND SCORED
    Correction: Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced. DISCUSSED WITH CFM TO EITHER RESURFACE OR REPLACE THE CUTTING BOARDS. BLUE CUTTING BOARD IS IN GOOD CONDITION.
  • Critical: Equipment / Food-Contact / Visibly Clean (corrected on site)
    Observation: The following equipment/ utensils were observed placed or stored in such a way that it appears soiled to sight and touch: OBSERVED THE ICE SCOOP FOR THE ICE MACHINE PLACED ON TOP OF THE MACHINE WITH THE SURFACE THAT COMES IN CONTACT WITH THE ICE TOUCHING THE SURFACE OF THE MACHINE
    Correction: Equipment food-contact surfaces and utensils shall be clean to the sight and touch. A surface that is soiled cannot be effectively sanitized. DISCUSSED WITH CFM, THE ICE SCOOP WAS MOVED TO A CONTAINER AFTER WASHING AND SANITIZING.
  • Critical: Sanitize / Hot Water / Mechanical/Thermolabel Test Verified
    Observation: Due to improper operation of the hot water, mechanical warewashing machine, the thermolabel did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized. OBSERVED BOTH THERMOLABELS PLACED ON DISH DID NOT TURN BLACK.
    Correction: Immediately discontinue use of the dishmachine. Repair the dishmachine so that a thermolabel will turn black. Until the machine is adequately repaired, set up the 3 vat sink to manually wash, rinse and chemically sanitize food-contact surfaces.DISCUSSED WITH CFM, MACHINE TO BE SERVICED AND REPAIRED WITHIN 10 DAYS AND INVOICE SENT TO 703-653-9448 ATTN: A 2 INSPECTOR WITHIN THAT 10 DAY PERIOD. USE ONLY THE 3 VAT SINK TO WASH ,RINSE AND SANITIZE FOOD CONTACT SURFACES TILL DISH MACHINE IS REPAIRED.

    Observation: Observed the handsink at thefront cookline area was being used by employee to wash wiping cloths.
    Correction: Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands.DISCUSSED WITH CFM AND EMPLOYEE WAS INSTRUCTED TO USE HAND SINK ONLY FOR HAND WASHING.

    Observation: The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device:Observed pasta at 43F, shredded cheddar cheese at 44F on the Randell 2 door prep top #1 and #2 - PUT IN THE WALK IN TO COOL TO 41F OR BELOW
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth.

A complete employee health policy is required to be in place at the food establishment. THE FACILITY HAD THE RED FOLDER CONTAINING EMPLOYEE HEALTH POLICY, BUT HAD NO SIGNED POLICIES - SEE COMMENTS
    Correction: A complete employee health policy must have the following elements:

    Observation: The following food items that are not easily identified by appearance were observed without a label:Observed unlabeled spray bottles - LABELED WITH CONTENTS NAME OIL
    Correction: Unless a food item can be easily recognized, all foods and ingredients removed from their original containers and stored in working containers shall be labeled using the common name of the food. For example: cooking oils, salt, sugar, flour, spices, herbs, etc.
  • Utensils That are In-Use / Between-Use Storage (corrected on site)
    Observation: Dispensing and/or in-use utensils improperly stored between use as follows:Observed knives stored between two prep refrigerators
