The purpose of today's visit was to conduct a routine assessment. It is encouraged to continually use temperature logs to measure food and unit temperatures as your establishment is currently doing. This ensures that food is properly cooled and cold held. This has a great implication in assuring public health as it limits the growth of bacteria on food that could cause food-borne illness. Also, maintain the current level of employee health training in your facility to keep all staff knowledgeable on when they need to report illness so that the PIC can either restrict or exclude them from direct food handling.
