  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Items on cold holding line were cold holding at improper temperatures (diced tomatoes, pico de gallo, corn pico de gallo, sour cream)
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Track items by time on the cold line until unit's temperautre is corrected. If food is holding at greater than 41 degrees, keep it for no more than four hours. Fax log sheet to Health Department at end of the day.
  • Cooling, Heating, and Holding Capacities
    Observation: Cold line refrigeration unit was not maintaing the proper temperature of <=41 degrees.
    Correction: Adjust or repair the cold line refrigeration unit as necessary to maintain food items at <= 41degrees. Improper food storage temperatures are a major contributing factor to foodborne illness. Please correct within 10 days.
