| Today’s inspection was to conduct a risk factor assessment. Thank you for accompanying me through the inspection as your participation allows me to clarify information and identify areas where your processes may need further attention or assessment. EHS provided additional training and written instructions on: -Date marking -How to test quaternary ammonium sanitizer *Please review with your staff date marking and testing sanitizer Good practice observed: -EHS observed pre-packaged salad that was elevated in temperature cooled back down to 41F and below in freezer for 30 minutes before putting them out on the line to be sold. **Please email EHS when quaternary ammonimum dispenser is correctly dispensing sanitizer chemical. In the mean time, please continue to add additional 3oz of sanitizer chemical to the sanitizer vat filled to the filled line. It has been a pleasure to serve you today.
