The purpose of today's visit was to conduct a risk factor assessment. Use the walk in cooler to store the single service containers of cut fruit rather than placing on ice to keep them at 41F or below. Please remove any items that are no longer in use in the facility.

Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. ITEM WAS MOVED TO WALK IN TO COOL

The purpose of today's visit is to conduct a routine inspection.
Critical: Hot Holding of Potentially Hazardous Food at 135°F or above (corrected on site) Observation: Meatballs and marinara sauce in steam well at 128F. Inadequate hot holding temperature.
Correction: Reheat meatballs with sauce to 165F or above, then maintain at 135F or above. Maintain steam well water level at highest level of product in container. Manager reheated item to 172F on stovetop during inspection.

The purpose of today's visit is to conduct a routine inspection.
Critical: Date Marking of Refrigerated, Ready-to-Eat PHF (TCS Food) (corrected on site) Observation: Observed that deli meats that have been sliced and portioned are not marked with a use-by date. The manager stated that the turkey, ham, and other deli meats are used within 2 days.
Correction: Mark the containers holding the deli meats with a use-by date not to exceed 7 days, including the date the meats are sliced.
Critical: Food-Contact Surface in Contact with PHF(TCS) Cleaned Every 4 Hours (corrected on site) Observation: Observed that meat/produce slicer was soiled with food debris. Manager stated that the slicer is cleaned once daily using a vinegar in water solution.
Correction: Slicer food-contact surfaces must be cleaned and then sanitized (using available chlorine/bleach solution) before use and every 4 hours during use. Disassemble the slicer to conduct a thorough cleaning following the manufacturer's instructions.
