Swai fish prepared in this facility and sent to Outer Hanks for cold holding and cooking at that facility. Fish is raw, frozen, divided into 5 lb. bags and sent to Outer Hanks while still frozen. Temperature log kept for process/copy in file. Recommend replacing weight pusher on large slicer. Tines are worn and can create a physical hazard. According to PIC, currently slicer only used for strawberries and green peppers and the weight pusher is not used when slicing these items. No food preparation at the time of the inspection. No foods are cooked in this facility, only baking of cookies. Food preparation includes making sets for Subway, salads, portioning Swai, slicing lemons and limes, baking cookies.
