Observed no food preparation during the inspection. Breakfast is served at 8:00 AM. Discussed the following with the person in charge (PIC): 1. Food sources are PFG & Sysco. 2. Only pasteurized eggs (liquid & shell) are used for all menu items. Only pasteurized juices are served. 3. Observed the employee health policy (FDA Form 1-B) signed by all staff and kept on file in the office. Observed a copy of the policy posted in the kitchen. 4. The fire extinguisher inspected August 2015 and the fire suppression system inspected October 2015. Observed the overall facility clean and well maintained. No food preparation observed. The lunch menu for today is ham & cheese sub, lettuce, tomato, onions, chips. The subs were prepared in the morning. Discussed the following with the person in charge (PIC): 1. Food sources are Sysco & PFG. 2. All eggs purchased are pasteurized (shell and liquid eggs) and all juices are pasteurized. 3. Observed the employee health policy posted in the kitchen and on file. Recommend that all staff sign a copy of the policy acknowledging that they have read the policy and understand it. The EHSS gave the PIC a copy of FDA Form 1-B. 4. The ventilation hood was cleaned on 6/5/15. The fire extinguisher was inspected in October 2014. Observed the overall facility clean and well organized.
