Observed no food preparation during the inspection. Breakfast is served at 8:00 AM.
Discussed the following with the person in charge (PIC):
1. Food sources are PFG & Sysco.
2. Only pasteurized eggs (liquid & shell) are used for all menu items. Only pasteurized juices are served.
3. Observed the employee health policy (FDA Form 1-B) signed by all staff and kept on file in the office. Observed a copy of the policy posted in the kitchen.
4. The fire extinguisher inspected August 2015 and the fire suppression system inspected October 2015.
Observed the overall facility clean and well maintained.

No food preparation observed. The lunch menu for today is ham & cheese sub, lettuce, tomato, onions, chips. The subs were prepared in the morning.
Discussed the following with the person in charge (PIC):
1. Food sources are Sysco & PFG.
2. All eggs purchased are pasteurized (shell and liquid eggs) and all juices are pasteurized.
3. Observed the employee health policy posted in the kitchen and on file. Recommend that all staff sign a copy of the policy acknowledging that they have read the policy and understand it. The EHSS gave the PIC a copy of FDA Form 1-B.
4. The ventilation hood was cleaned on 6/5/15. The fire extinguisher was inspected in October 2014.
Observed the overall facility clean and well organized.
  • Warewash Machine, Data Plate Operating Specifications
    Observation: The data plate on the warewashing machine is torn, worn down and difficult to read.
    Correction: Provide a new data plate for the warewashing machine that lists the machine's design and operating specifications.
  • Non-Food Contact Surfaces
    Observation: (CORRECTED DURING INSPECTION): The nonfood contact surfaces of the following equipment has accumulations of grime and debris:
    1. microwave oven,
    2. floor fan,
    3. can opener
    4. knife holder.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Equipment and Utensils, Air-Drying Required (corrected on site)
    Observation: Food storage containers were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The following physical structures noted in need of cleaning: floor at/behind oven, floor/walls at dishmachine
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
