Employees observed washing hands and wearing and changing gloves several times during inspection.Temperatures being monitored on foods being cooked and all refrigeration and hot holding units in the cafeteria. This school is designated to prepare dinners for the after school program for the high schools and several churches. The preparation begins about 2:00 p.m. and the prepared meals are delivered to the facilities for approximately 100 students. This school on occasion also caters meals. These programs run throughout the school year. Staff should be commended for their efforts in assuring foods are prepared in a safe manner at all times. Temperatures being monitored on foods being cooked and all refrigeration and hot holding units throughout the cafeteria. Staff observed using an ice bath to cool foods (GREAT JOB 151 F HOLDING TO 56 F IN LESS THAN 2 HOURS) Staff should be commended for their efforts in assuring foods are prepared in a safe manner at all times.
