Discussed cleaning and sanitizing. Items that come in contact with food that requires time for control(tcs foods) must be cleaned and sanitized every 4 hours.
Good prevention of barehand contact and handwashing. Discussed when to wash hands. Any time you change tasks or handle raw animal foods, hands must be washed in between changing gloves.
Discussed cooling of foods. Today a macaroni salad was being prepared. The macaroni was still above 135°F. Once an item is at 135°F, it must reach 70°F within 2 hours and 41°F in a total of 6 hours. Placing the pan of macaroni on the wire shelf should let it cool fast enough and all other ingredients are pre-chilled.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: The raw hamburger on display stored in the top of the prep unit may cause biological cross contamination of to ready-to-eat food (RTE).
    Correction: Separate raw animal foods during storage, preparation, holding, and display from raw RTE food such as vegetables and cooked RTE food.
  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: Wiping cloths improperly stored between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The ready-to-eat (RTE) commercially processed deli ham and bologna in the refrigeration unit was not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. The day it is opened counts as day one, so the ham opened today would be good until 3/21.
  • Refuse - Covering Receptacles
    Observation: Dumpster or outside refuse container was open or uncovered.
    Correction: Cover all waste containers when not in continuous use.
  • Refuse - Using Drain Plugs
    Observation: The refuse container used to store refuse/recyclables has no drain plug.
    Correction: Replace the drain plug to the refuse container.
  • Outer Openings - Protected
    Observation: The front door was left open due to the heat in the kitchen.
    Correction: Install a screen door that would protect the entry of insects.
