Manager is responsive, personable, and professional. Facilities are clean, organized, and controlled. No deficiencies noted. HACCP review: HACCP plan, cook log, time as PHC, cooling, thermometer calibration, and refrigeration logs. Note to mgr: ensure staff document reheating of previously cooked and cooled foods so that their is documentation to prove reheating was accomplished within 2 hr limit. A school facilities inspection, separate from the food operation, was also conducted. Reviewed were all restrooms, water fountains, lighting, ventilation, hallways, entryways, water and sewer. A well-run school kitchen with responsive, well-trained staff. Facilities are dated but organized, well-stocked, and clean. Commercial warewasher is still not repaired (no funds for repairs). All dishes washed by hand. All students use disposable trays and utensils. It was noted during inspection that facilities are sometimes used after school hours for PTA and other group meetings/events. Evidence was present that unsupervised access to the kitchen and employee bathrooms off of the kitchen had occurred during the last such event. EHS spoke with principal and with Grayson Co Food Service Mgr about this problem, as a commercial kitchen cannot have untrained personnel in the facility. Principal has agreed to obtain ServSafe Mgr training at next Grayson Co training, and will be the responsible party in charge of the facilities at all such after-hours events. Cafeteria kitchen is well run, with knowledgeable staff and organized facilities. School facilities are older and rather worn, but some newer equipment is present. The warewasher, non-operational since the previous inspection, has not been repaired due to Grayson Co financial constraints. All dishwashing is by hand, with student trays being disposable. A full school inspection was also conducted. School facilities written inspection attached to printed file.

Note: warewashing machine is down for repairs but cannot be fixed until the new fiscal year ($$ constraints) for the county. All dishwashing is being done by hand at the 3CS. Staff are well-versed in proper procedures and are conducting operations smoothly, in clean, well-maintained facilities.
