PIC plans on holding an in-service training for employees on food safety principles. Employee with potential health issues is not working until a doctor's note can be provided. A work order has been issued for painting the entire dishwashing area (including exposed wood). Employees are currently working on cleaning the facility. Many improvements have been made.

Spoke with PIC about cooling. Provided a cooling chart to monitor the cooling process.
  • Refuse, Recyclables, and Returnables - Outdoor Storage Surface
    Observation: The outdoor refuse container is stored on absorbent material. Observed outdoor refuse containers stored on grass and gravel.
    Correction: All refuse containers are to be stored on smooth, nonabsorbent material that is sloped to drain. Refuse containers can be stored on asphalt or concrete. Correct within 90 days.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Chlorine sanitizer in the 3 compartment sink being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940. Observed sanitizer too strong.
    Correction: Utilize only chlorine sanitizer that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces. Chlorine should be between 50 and 100 ppm.

Facility is overall clean and organized. Keep up the good work. Remind employees about proper glove usage and when to change gloves.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: handles on sugar and flour bins and around nozzles of juice machine.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
