Observed facility very clean and organized, Thank you. Proper Active Managerial Control practices in place.
*Active Managerial Control Award presented to CFM. CFM has demonstrated the following: exceptional Staff Training in proper Food Handling, Cleaning, maintaining Sanitizing solutions with periodic checks, refrigeration temperature logs and positive feedback to all staff throughout inspection. Excellent job!

EHS provided additional copies of Employee Health Policy in English, Korean, Vietnamese and Chinese.
NOTE: Delfield 1DR Hot Box at Line #3 is currently out of order as was observed with ambient temperature of 260F. Maintenance and repair conducted during inspection.

  • Critical: Quaternary Ammonium Compound Sanitizer Solution Concentration per Use Directions (corrected on site)
    Observation: When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the SANITIZING BUCKETS AT SERVING LINE #2, 3, 5 with a concentration of <100 ppm total quaternary ammonium compound.
    Correction: The quaternary ammonium sanitizer used in this facility shall have a minimum concentration of at least 200 ppm OR a concentration between 150-400ppm based on the manufacturer's use directions and using the appropriate test kit. CFM ADDED NEW SANITIZER SOLUTION TO BUCKETS.

The purpose of today's visit is to conduct a routine inspection.

05/16/2013Routine
The purpose of this visit is to conduct a complaint inspection related to a confirmed case of foodborne illness. An environmental assessment and assessment of the employee health and handwashing policies/practices was conducted. In addition and assessment of to determine if any of the food workers have been ill or experiencing symptoms consistent with the confirmed illness,to review the employee health policy was also conducted. Details are noted in a seperate Note to File.
Quaternary ammonium tested at 200ppm using facility test kit.
Observed employees assigned to one task only and employees appeared to be aware of duties.
Observed proper hand washing and gloving technique during todays visit.
During this visit observed 4 employees wash hands after leaving the assigned food line and prior to returning their assigned food lines. Gloves properly placed onto hands after handwashing.
No bare hand contact with ready to eat foods observed.
