Found indirect drain connection at the 3-compartment sink.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination as well as being stored over ready to eat foods.
    Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage by arranging each type of food so that cross contamination of one type with another is prevented
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The ready-to-eat (RTE) commercially processed in the refrigeration unit was not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Prohibitions - Single Service (corrected on site)
    Observation: Clean equipment/utensils were found stored under the sink.
    Correction: Discontinue storage of clean equipment and utensils in a location subject to contamination.

    Observation: A direct connection exists between the drain line of the sanitizing basin of the 3-vat sink and the sewer line.
    Correction: Eliminate the direct connection between the sewer line and the cited equipment (provide an indirect drain connection at the 3-compartment sink).
