Note: Have installed spring loaded hinges for almost all the entrance and exit doors of the establishment and working on finishing the remainder doors during this routine inspection.
  • Food Storage Containers - Identified with Common Name of Food
    Observation: Observed unlabeled containers of flour and sugar on the kitchen counter.
    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
  • Nonfood Contact Surfaces
    Observation: The nonfood contact surface of the wooden knife block is not designed or constructed to be easily cleanable.
    Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. May install a magnetic knife strip instead.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a Chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Toilet Room Receptacle Covered
    Observation: There is no covered trash container for the disposal of feminine napkins in the unisex employee bathroom.
    Correction: Install a covered trash container for the disposal of feminine napkins in the unisex employee bathroom.
  • Toilet Rooms - Enclosed
    Observation: Employee toilet room door is not provided with a self-closing door
    Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Soap was not provided at the hand washing sink in the kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

    Observation: No disposable towels were provided at the hand washing sink in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Need to install hand washing signs at the hand washing sink in the kitchen and the employee bathroom
Need to have a trash can at the kitchen hand washing sink to dispose of paper towels
Need to make sure have soap at each hand wash sink
Need to have a covered trash can in the unisex employee bathroom
Need to install a no smoking sign
Need to install spring loaded hinges for the employee bathroom door and all entrance and exit doors of the establishment
Need to install a back flow prevention device with double check valve and atmospheric break on the mop sink
Need to either install cove base or apply a silicone seal where the floor and wall juncture meets in the kitchen, mop sink room, and any where that food is prepared or stored
