Operator was given a copy of the Guide to employee health in food establishments along with Form-1B, employee reporting agreement to put with the already have health policy. The Operator needs to renew his Manager's Certification in food sanitation. a list of local agencies providing the training was given.
To Operator indicated that he will first attempt to fix the roof and if the repairs do not work ,he would provide a permanent splashguard. To monitor roof situation especially when it rains. HM
- Food Preparation
Observation: Found rain water still coming down from roof and splashing onto the service counter located adjacent to the grill surface where foods were being prepared. The plexi glass was up in some places but not extensive enough to prevent splashed water from getting onto the gill surface/foods.
Correction: Protect the foods/food contact surface by fixing the roof or by providing a more extensive splashguard to prevent any rain water from getting onto the food contact surface/foods.

Food Permit was re-issued today. The existing designation of this facility will be changed from a mobile unit to that of Other since this unit is not mobile. A re-inspection will be made in about 10 days to check on item #37 above. HM.
- Person in Charge
Observation: The Food Employee in charge at the time of inspection was not currently trained in food sanitation and did not demonstrate adequate knowledge of food sanitation..
Correction: All Food Employees are required to have Foodhandler training in order to obtain a Foodhandler's card. A Foodhandler training schedule was given so Foodhandlers can attend classes and obtain a Foodhandler's card.

Observation: The Food Employee in charge at the time of visit was not knowledgeable about the importance of an employee health policy as it related to employee health and the transmission of diseases.
Correction: An employee health policy is to be put in place to address reporting requirements and the steps taken to prevent the transmission of diseases.

Observation: The Foodhandler did not demonstrate when hands should be washed before putting on gloves to handle foods.
Correction: The Foodhandler is to wash hands before putting on gloves to handle foods especially after engaging in activities that contaminate the hands.

Observation: The Foodhandler was observed handling ready-to-eat (RTE) food with bare hands.
Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

Observation: Raw meats were stored over ready-to-eat (RTE) food in the refrigeration unit.
Correction: Store raw meats on lower shelves and ready-to-ate foods on upper shelves.
- Utensils - In-Use - Between-Use Storage
Observation: In-use utensils were not being washed at least every four hours or when they get contaminated/dirty.
Correction: In-use utensil are to be washed and sanitized at least every four hours or when they become contaminated/dirty.
- Cloths - Wiping Cloths - Use Limitation (repeated violation)
Observation: Wet wiping cloth was sitting on the counter in between use rather in a sanitizer solution.
Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
- Food Preparation
Observation: Water was coming down from the overhead awning and splashing onto the service counter/grill where unprotected foods were in close proximity to being exposed to the splash.
Correction: Protect unpackaged food on the grill from rain water leaking down from the awning.

Observation: Open packages of cold cuts and other cooked meats were stored inside the cooler unit for more than 24 hours without being Date Marked for disposition.
Correction: Date Mark potentially hazardous foods that are going to be stored inside the cooler unit for more than 24 hours.
- Warewashing Equipment, Cleaning Frequency
Observation: The 3-compartment sink was dirty and needed cleaning.
Correction: Clean the 3-compartment sink.
- Light Bulbs Protective Shielding (repeated violation)
Observation: The Light tube bulb over the 3-compartment sink area was not shielded, coated, or otherwise shatter-resistant.
Correction: Provide a protective cover over the light tube.
- Hand Drying Provision
Observation: No disposable towels were provided at the hand sink
Correction: Provide disposable paper towels at the hand sink.
