Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

Observation: Observed clean dishes still soiled with grease.
Correction: Make sure dishes are cleaned completely and the trays are scrubbed clean before putting them away.

Observation: The insides of the fry freezer, the floors of the walk-ins, and the outsides of the other refrigerators and drink machines are in need of cleaning.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: The filter line in the back has a small leak in it.
Correction: Have leak repaired, this will help eliminate the standing water.

Observation: Vent hood filter is missing a section in the middle. Several tiles throughout the facility are missing, broken, or the grout is wearing out.
Correction: Have that filter replaced so that it can function properly. Replace missing and broken tiles, and the grout will have to be done eventually.

Correction: Clean floors and walls regularly to prevent build-up of grease, trash and food debris. Clean vent hood filters regularly.

Observation: Chicken out of the broiler was cooked to 150 degrees in the center.
Correction: Discarded the under cooked piece of chicken. Keep and eye on the broiler when making chicken to ensure that it is cooked to at least 165 degrees.
