    Observation: Wood pallets in walk in freezer are absorbent and cannot be easily moved for cleaning. Wood shelves in storage area are not sealed.
    Correction: Nonfood contact surfaces are to be nonabsorbent, durable and easily cleanable. Replace pallets with shelves or racks that allow for easy cleaning under and around them. Finish shelves so they are nonaborbent and easily cleanable or replace them.

    Observation: Wood pallets and unsealed wood shelves are not durable and easily cleanable.
    Correction: Replace with materials meeting these requirements or seal wood.

Remove any items not necessary for operation of food establishment. Seal any raw wood shelves that may be exposed to spillage, splatter or food soiling so the shelf can be easily cleaned. If pallets are used to store food off floor in freezer the pallets must be easily moved. Recommend using racks that hold food 6" above floor and can be cleaned under easily. Discussed importance of handwashing - before scooping ice cream or any other food prep activity after doing any other task.

    Observation: 1. Foil covered cardboard used to prevent food debris from going between equipment.
    2. Plastic adhesive protector or exterior of reach-in refrigerator is peeling.
    Correction: 1. Nonfood contact surfaces exposed to splash or soiling need to be made of durable, easily cleanable materials. Correct by removing foil covered cardboard piece. 2. Remove this plastic so exterior is easily cleanable.
