    Observation: A food employee failed to wash their hands before engaging in food preparation after taking payment, and upon reporting to work.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task. Discussed this with the PIC who then instructed employee to wash hands. PIC will address this concern with all employees.
  • Handwashing - Using a Handwashing Lavatory
    Observation: The handwashing facility located in the "kitchen" is blocked, preventing access by employees for easy handwashing.
    Correction: Handwashing sinks must be accessible for handwashing during all hours of operation. Remove the drying rack from the sink.
