    Observation: Pork cold holding at improper temperatures. The pork was in a deep pan and filled to the top, not allowing the pork to cold hold at 41°F throughout all levels in the pan. The temperature at the bottom of the pan was 41°F, but the pork at the top of the pan was 55°F.
    Correction: TCS foods under cold holding in pans should not be over-filled to allow for proper cold holding temperatures to be achieved throughout the entire product..

    Observation: Sponges are being used to wipe down food contact surface of the three compartment sink.
    Correction: Discontinue use of sponges for this purpose as they are to be used only where they will not contaminate cleaned and sanitized, or in-use food contact surfaces.
