Utensils - In-Use - Between-Use Storage (corrected on site) Observation: In-use utensils improperly stored between use. Frothing spoon stored in sanitizer between uses.
Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F. Time control is used for control every 3 hours. Rinse and store dry. Corrected during inspection.
Equipment, Utensils, Linens, and Single-Service and Single-Use Articles Observation: Coffee brewing equipment was found stored on the floor between uses.
Correction: Store food equipment in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor. Correct today.

Routine
Retail RIC left should be adjusted to keep PHFs at slightly lower temps. Border line 41-42 temps were pulled. Install additional measures to keep the public out ot the rear food production area.
Person in Charge Observation: Unauthorized personnel such as children or customers in the food preparation, food storage, or warewashing areas.
Correction: Remove unauthorized personnel. The person in charge shall not permit persons unnecessary to the food establishment operation in the food preparation, food storage, or warewashing areas. Additional reinforcement is necessary to prevent public access to rear food production area. Floor tape, access limiting barrier etc. Begin correction immediately
Sewage - Other Liquid Wastes and Rainwater Observation: Sink drain was emptying liquid waste directly onto the floor of the kitchen..
Correction: Relocate or repair the drain line to prevent liquid waste discharge onto the floor surface. A hub drain or floor drain design must be installed to prevent discharge onto the floor from sink. Correct in 15 days.

Routine
Went over Healthy Food Handler Policy with PIC. No food service or prep at the time of inspection. Un-opened soups will be returned to GLC kitchen for cooling and tracking log to show transport temps.
Floor and Wall Junctures, Coved, and Enclosed or Sealed Observation: Floor wall juncture in a cementized column is not coved and closed to no larger than 1/32 inch space. Durable material need at mop sink.
Correction: Cove floor wall juncture to no larger than a 1/32 inch space. Need base molding on the front and left side of column. Install FRP or equivalent nonabsorbent material on the walls 2 foot up around mop sink. Correct in 10 days.
