  • Outer Openings, Protected / Screen Requirements (corrected on site)
    Observation: Back door is kept open for ventilation and opening is not protected by a screen or other effective means.
    Correction: MANAGER CLOSED THE DOOR. Provide screens (16 mesh to 1 inch), air curtains, or other effective means to protect against the entry of insects and rodents.

  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Sliced tomatoes (44'F), sliced turkey (50'F), and sliced brisket (51'F) in beverage air two door prep due to stocking above the fill line.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. FOOD ITEMS WERE REMOVED TO ENSURE STOCKING BELOW THE FILL LINE.
  • Critical: Equipment / Food-Contact / Visibly Clean (corrected on site)
    Observation: The following equipment/utensils were observed soiled to sight and touch: cutting board attached to beverage air two door prep cooler.
    Correction: Equipment food-contact surfaces and utensils shall be clean to the sight and touch. A surface that is soiled cannot be effectively sanitized. CUTTING BOARD WAS REMOVED TO BE CLEANED.
  • Handwashing Sink / Accessible at All Times (corrected on site)
    Observation: The handsink next to the ice machine was blocked by box, preventing access by employees for easy handwashing.
    Correction: A hand washing sink shall be maintained so that it is accessible at all times for employee use. ITEM WAS REMOVED TO ALLOW ACCESS BY EMPLOYEES FOR EASY HANDWASHING.

NOTES:
* The purpose of today's visit was to conduct a routine inspection in conjunction with a complaint investigation.
* Caller visited the facility on Monday Feb 24, around 3:30pm, he would like to report a case food poisoning from eating there, the only thing he had was Angus burger with cheese and bacon, he started feeling sick after 5 hours he had diarrhea and vomiting, did not go to the doctor. Reviewed the food processes of the Angus Burger from receipt to service. Angus Beef was observed at proper cold-holding temperature, prepared by employee with clean & gloved hands, prepared on a cleaned and sanitized food surface, reheated in microwave to 174 degrees at time of inspection, and then served to customer. Observed no risk during the food process at the time of inspection. Complaint to be notified of findings via phone call following inspection.

The purpose of today’s visit was to conduct a routine inspection. Certified Food Manager (CFM) on duty during inspection is knowledgeable. Facility has several CFMs on staff.

Observed facility clean and organized.
