    Observation: Several in-use utensils were observed stored in a container of standing water.
    Correction: In-use utensils may be stored in a container water only if water is running into the container so that loose food particles can be washed away.

    Observation: Foods in process of cooling were observed in the walk-in refrigerator, stacked, with lids on the containers, and arranged in very close proximity so as not to allow free heat exchange.
    Correction: Containers of cooling foods must not be covered, and should be arranged in such manner so as to allow air movement around the containers.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: Plastic and stainless food containers were observed with food particles attached to the food contact surfaces.
    Correction: Food contact surfaces shall be clean to sight and touch.

    Observation: Plastic and stainless food containers were observed stored wet in nested position
    Correction: After washing and sanitizing, foot contact utensils must be allowed to air dry.
