  • High Priority - All potentially hazardous (time/temperature control for safety) foods in reach-in cooler cold held at greater than 41 degrees Fahrenheit. Observed front display cooler with the following temperatures: feta 57°F, blue cheese 58°, packaged mozzarella 60°, cheddar 56°, cow's milk cheese 56°, cut tomato 59° and roasted garlic 58°. Observed no ambient air thermometer within unit and Operator was contacted by phone and stated that the thermometer had fallen out and broken and she had just purchased a replacement along with other supplies. Operator stated that the unit was reading an ambient air temperature of 37°F. Inspector observed heavy ice buildup within the unit and upon arrival the unit appeared to not be running. As items were moved and relocated to functioning cooler, the fan within the unit kicked on. Advised establishment to monitor unit and call a repair man if unit is not maintaining temperature of 41°F or below. Observed all potentially hazardous food moved to refrigerator at back of store. This violation must be complied by Tuesday August 19, 2014. (Observed establishment closed on Mondays) **Warning** Open callback 8/19/14: Observed no food currently held in front display cooler. Observed establishment and repair man working to defrost/repair unit.

Observed Andrew on staff at time of inspection with no proof of training and no proof of employee training of any kind available. Operator was contacted and stated that all training files are kept at her personal residence. Andrew has been employed over 60 days at the establishment. **Warning**
