The purpose of today's visit was to conduct the first operational inspection of this facility since it has opened. All food temperatures were within the acceptable range. The quat sanitizer made up on site was around 300 ppm. Employees were observed washing hands. Reportable illnesses was reviewed with manager. Clean facility overall.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Raw shell eggs stored over ready-to-eat (RTE) food, milk and cheese, in the refrigeration unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions. Firm had chlorine test strips but were using quaternary ammonia sanitizer.
    Correction: Obtain a quaternary ammonia test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of equipment and utensils were not being sanitized during the day and was only sanitize at the end of the day.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Always sanitize all food contact surfaces after washing them.

The hot water at the hand sink was 105 degrees. The 3 basin sink had hot water at 120 degrees. The walk in cooler and freezer had a light at 10 foot candles @ 30 inches off the floor. The lighting meets code as the minimum is 10 foot candles. Correct the above item prior to opening. Wash, rinse and sanitize all food contact surfaces prior to opening. Approved for permit once the health department application has been submitted and fee paid.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed
    Observation: Floor wall juncture in cabinet at trash bin area is coved and closed to no larger than 1/32 inch space.
    Correction: Cove floor wall juncture to no larger than a 1/32 inch space.
