    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Observation: Hot / Cold water under insufficient or inadequate pressure was found to serve the following equipment: front serving area
    Correction: Inadequate water pressure could result in improper handwashing or equipment operation. Restore water under sufficient and adequate pressure to the front serving area immediately.

    Observation: Observed a hose attached to a faucet fixture. The hose extended below the flood rim level of the sink basin.
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

    Correction: Elevate food storage onto approved shelving with minimum 6" legs or casters.

    Observation: The ice on the customer self-service table ( near water dispensor) is not protected from contamination.
    Correction: Protect food on display by the use of packaging - counter, service line, or salad bar food guards - display cases - or other effective means to prevent contamination.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The two shelves above the three compartment sink are observed in a condition that prevents necessary maintenance and easy cleaning.
    Correction: Replace the rusting shelves with ones that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: The nonfood contact surface of the "dry storage" unit has accumulations of grime and spilled dry foods in the bottom. Organize this unit and thoroughly clean the bottom.

The mistaken use of food from an unlabeled container could result in chemical poisoning.

    Observation: The handwash station at the kitchen is being used as a dump station.
    Correction: The handwash facility identified above is to be used for washing hands only

    Observation: Wall behind the cookline & the floor below the cookline is noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
