    Correction: Ensure that the person in charge has a valid certified food protection manager certificate and/or correctly demonstrates knowledge of the food operation as it relates to the EHS's questions.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation*
    Observation: Opened can put back in cooler.
    Correction: Protect food from cross contamination by storing food in packages, covered containers, or wrappings and emptying canned foods into a stainless steel hotel pan.

    Observation: The prepared ready-to-eat (RTE) in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and ""consume by"" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

12/30/2014Follow-up
No Permit Issued at this time. Re-inspection of all violations will be conducted on 12/30/14. All employees to obtain food handlers cards. Discussed proper thawing techniques (not leaving meats out all night on a counter), proper hand washing, sanitation and sanitizer testing, proper use of mop sink (not using sink to make lemonade). Discussed pest control methods, date marking, hot holding, utensil storage, and all the violations observed.
  • Critical: Demonstration of Knowledge*
    Observation: No employee policy in place. The person in charge failed to explain his or her responsibility in preventing the transmission of foodborne disease by an employee who has a disease or a medical condition that may cause foodborne disease.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.

    Correction: A food service employee shall have a valid food service card prior to working in the food service establishment. The person in charge shall not employ anyone to work in the food service establishment until they posses a valid food service card.     Observation: In-use utensils improperly stored between use.
    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 140°F and the container.

    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

    Correction: Clean and sanitize food-contact surface of equipment and pans. Discard carbonized pans due to lack of cleanability.

    Observation: Storage of soiled utensils was adjacent to clean utensils.
    Correction: Maintain separation of soiled and clean tableware to prevent contamination of clean items. Clean and sanitize any contaminated tableware prior to use.

    Observation: Wall or wall covering is not smooth and easily cleanable.

    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

During the inspection, double panning was discussed with the owner. This practice is highly discouraged, as hot holding to the adequate temperature is limited. All foods in the steam table are used within the hour, according to the owner. The new food regulations were discussed with the owner, as well as, the employee health plan, proper hand washing and no bare hand contact with ready to eat foods. Permit issued. Thank you.

    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.

    Observation: Food containers for cooling food are arranged so as not allow for maximum heat transfer.
    Correction: Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

    Observation: Deli meat and tomatoes, wrapped and stacked in the prep unit, observed cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Allow meat and tomatoes to cool to 41 degrees or below by storing them is smaller portions. Deli meat and tomatoes labeled with a time stamp while on site, not to exceed four hours.

    Observation: Chicken observed double panned in the steam table, hot holding at improper temperatures.
