    Observation: Found walk-in unit iced over, temperature rising.
    Correction: All equipment to be in good operating order. Please have unit checked out.
  • Warewashing Equipment, Clean Solutions (corrected on site)
    Observation: Found rinse sink full of sanitizer solution.
    Correction: 3 compartment sink to be used as directed in instructions on wall - wash, rinse (clean water), sanitize.

    Correction: All hot hold to be at 135 degrees or higher. Product was pulled and heated to 170 degrees.
