    Correction: Clean the sink compartment(s) or drainboards: 1) before use. 2) throughout the day at a frequency to prevent contamination of food, sanitized equipment and utensils. and 3) if used, at least every 24 hours.

    Observation: Plastic storage utensils was observed in a state of repair and condition preventing effective maintenance and easy cleaning.
    Correction: Discard, replace or repair the utensils to provide proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.

    Observation: The base of the hand sink's handles has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: The hood filters at the fryer station are in need of cleaning,

    Observation: Interior partition of the ice machine is moldy along edge.
    Correction: Clean the surface of the ice machine at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Observation: Single service items (coffee filters) observed unprotected from contamination.
    Correction: Store single service items in its original protective packaging or inverted in an approved dispenser.

    Observation: The handwashing facility located at the milkshake/ dessert making station is blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the plastic milkshake collars preventing its use.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Floor noted in need of cleaning in the following areas: below grill, below fryer, below milkshake and Slush machines. Wall at three comparment sink is in need of cleaning/ recaulking where backsplash of sink meets wall.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: An excessive number of dead trapped insects were found in the pest control device at the back of the kitchen.
