NOTE: Great job date marking on prepared foods. Good job storing in-use wipe rags in bucket with sanitizer. Good job storing chemicals separate/below foods and clean dishware. Cafe was clean and neat. Reminder that blenders used to make beverages must be washed, rinsed, sanitized,and then air dried at least every 4 hours of use. Discussed cooling foods in a large cooler or walk-in cooler prior to placing into the small prep cooler.
